beet root soup
ideal food for February cleansing. They offer a healthy remedy to a congested spring liver.
2 Fresh beets
1 1/2 cups coconut milk (unsweetened)
1/4 Onion (red)
1/2 tea spoon cumin
1 table spoon lemon juice
1/2 cup Water
Spices
Salt, pepper,
Instructions
Peel and chop the beets ,onion and cumin Cook them with the water in low-medium heat, covered, for 20-25 minutes or until tender.
mix it well adding coconut milk salt pepper
Serve in a soup bowl and top with fresh dill leaves and freshly squeezed lime juice. Enjoy.
