WHAT IS AAMA IN AYURVEDA?

The matter which we receive from the universe (VIJATEEYA) has to be converted into suitable substances which could be appropriate for the the body (SAJATEEYA). 

It is the result of AGNI (the digestive and metabolic processes).

Example..
The synthesis of a neuron (a nerve cell), a lipo protein or an epithelial tissue or an osteophyte or a hormone, say TRIDOSHA, SAPTADATHU, MALAS etc. are all derivatives of only a qualitative change of AAHAARA but not of a synthesis of new amino acid or DRAVYA.

So, 
the main function of AGNI is to make a change in the matter, but it never produces the matter.

Always a process or a chain reaction starts and ends up to attaining certain form either in synthetic process (anabolic) or in decaying process (catabolic), resulting in carrying a function. 
ЁЯСЗ
If this process of transformation gets hindrance due to any of the causative factors (incompatible dietary and living lifestyle) a state is formed called AMA. 
So, finally AMA can be defined, as 
 ЁЯТРЁЯТР
"AMA is a state of substance resulting in the process of PAAKA or transformation or GUNANTARADHANA but not attained PAAKA or finality".
